This is how I deal with hostile mobs in Minecraft, up to version 1.6.

Zombies:
In 1.6, Zombies tend to call his friends to help murder you when they spot you, so best not to go outdoors at night. But when you do go, be sure to bring extra swords because when just one zombie spots you, tons and tons will be directed at you. Optionally, you can enchant "Knockback" onto your sword to improve your chances of escape. You can also enchant "Looting" onto your sword to get an additional income of food.

Skeletons:
During the 1.5 update, Mojang increased the agility of Skeletons to amp up the difficulty, so now Skeletons shoot twice as fast. Other than that, there's not much to be afraid of from Skeletons. There are a few moves to avoid being rapidly shot by Skeletons' arrows, one of which is called "Serpentine". Serpentine is reliable and easy to master, that's because it's just basically moving or running in a zigzagging motion towards them. For more information, watch a few of VintageBeef's videos. The "Looting" enchant is ideal to get more bones for farming purposes and to tame wolves, as well as more arrows.

Spiders:
Spiders are one of the easiest hostile mobs to deal with, you just need to be swift, precise and steadfast. In cave openings or whenever you're under something at night, Spiders recklessly jump towards you from above and take damage in the process, so a fraction of their health will be gone, making them easy to kill, even without armor or epic enchants on your weapons. There's a variant of Spiders are Cave Spiders, unlike their cousins, they are a bit difficult to deal with as they have a big chance of inflicting you with a "Poison" effect, which slowly depletes your health at half a heart per second until you're down to half a heart. They only spawn in Abandoned Mineshafts, so I recommend to carry some buckets of milk before entering. Another variant of Spiders are Spider Jockeys, which is basically a Skeleton riding on a regular Spider, they are a deadly mixture of range and power. Best have a bow ready when facing them, or maybe Serpentine to get them.

Creepers:
Creepers are silent but violent, they are a walking TNTs with the urge to blow up whenever they get near a player. They are incredibly unstable, never attempt to get near them, avoid them at all costs. If you're forced to fight them, the "Knockback" enchant is highly recommended. Unless you're skillful or courageous enough to face them, run away or dig a hiding hole. Creepers also tend to blow themselves up right behind you when you least expect them to appear, like when you're building, mining or just doing stuff in general. Cats are a way to scare them off, or at least prevent them from spawning. No cats? Well, you can also lead them to a nearby water pool and get them to blow up there, water reduces the blast damages done by Creepers.

Silverfish:
Silverfish are seriously a pain in the ass, attack a single one of their brethren, tons will emerge from Monster Eggs. One of the quickest ways to kill a swarm of Silverfish without spawning more, is to build a two block high platform so that they're not able to hit you, once you're safe, pour a bucket of lava onto a side of the platform and watch them burn. Better yet, a Diamond Sword with "Sharpness" or "Bane of Arthropods" kills them in one hit, without disturbing other Monster Eggs.

Witches:
Witches are a special kind of annoying, especially in adventure maps, when they're loads of them. In addition with other hostile mobs, they literally own you in mere seconds just by throwing harmful Splash Potions at you, they also frequently consume Health Potions to rejuvenate their health. Whenever you face them, charge right at them and spam your attack button, doing this will give her no choice but to drink potions while slowly watching you take their lives.

Endermen:
Endermen are pretty easy to deal with, to me. As long as you have armor and water, you don't need to worry a thing. The sounds they make might scare you, but they're semi-passive nonetheless. But when you do get their attention, they teleport around to attack you from different directions, rendering you confused and sometimes really frustrated. Since they're afraid of water, just pour a water bucket around you and he'll become passive again and run away. If you need Ender Pearls, make sure your armor is in good condition, because they deal a lot of damage when you're naked.

Zombie Pigmen:
Pigmen are close to unnecessary to fight with, they do not have any interesting drops, hit one of them, tons will be chasing you down. Avoid them at all costs. If you do hit them, quickly build a protective hut or dig a hiding hole, once you're set, strategically dig around and pick them off one by one. If you're looking for a rage-inducing challenge in Minecraft, Pigmen will be the first on your list.

Ghasts:
Ghasts are fairly easy, but annoying as hell. They shoot giant Fire Charges that explode on impact, which are basically flying TNTs, but they are usually easy to deflect or avoid. Ghasts usually spawn in open areas, so avoid building Nether bases in those places. They usually die in one arrow hit, or one successful deflect.

Wither Skeletons:
Wither Skeletons are fast and strong, fighting them is a definite challenge. Wither Skeletons spawn in Nether Fortresses, alongside other Nether-based mobs, but unlike normal mobs, they are 3 blocks high instead of 2. With that being said, the easiest way to fight them is to put something 2 blocks high and they'll be blocked, while they're attracted to you, you can just murder them easily.

Slimes/Magma Cubes:
There are not much differences between Slimes and Magma Cubes, which is the main reason why I decided pitched these guys together. They multiply upon death, each time smaller in size until they completely fade away into Experience Points like all the other mobs. Slimes drop Slimeballs, which is needed for Sticky Pistons, while Magma Cubes drop Magma Cream, which is a brewing material. They drop a lot due to their multiple deaths, so the "Looting" enchant is optional.

Never got to fight with a witch before.. Thanks for the info maybe i'll get some advantages next time on the mobs :3

You usually find witches hanging out in their huts in swamp biomes at night.

I saw a house on a swamp biome on single player a long time ago but it was morning so no witch.. i just took whats inside lol xD
